Vegetable Mash

Serves 4.

Preparation time 8 minutes. Cooking time about 11 minutes.

We used the Microsafe® jug.

1kg root vegetables such as potato, sweet potato, pumpkin and onion.

Peel vegetables and dice small. Put into the jug. Add 1 cup hot water. Put lid on jug with pourer open. Microwave on high for 5 minutes. Stir.

Microwave again until vegetables are soft (about 6 minutes). Remove from microwave. Let rest for 2 minutes. Leave the flap open while the food is hot. Open pourer and drain away water. Remove lid.

Mash and season in the jug, adding 45 grams butter or margarine and some finely chopped parsley or chives.
Serve.
