Pea Soup

Frozen peas make a very good soup, which has a lively fresh taste and an appealing pale green colour.

It can be left fresh and light or a little cream can be added to make a richer soup. Trickle the cream to make a little circle or whip some cream and put a spoonful on top so it melts.

Serves 6. (makes 6 cups).

Preparation time 10 minutes. Cooking time 23 minutes.

We used the Microsafe® jug.

30 grams butter
1 onion, finely chopped
6 lettuce leaves, cut into very fine shreds
500 grams frozen peas
4 mint leaves
1 teaspoon sugar
4 cups stock or water mixed with a stock cube
salt and pepper to taste
Put butter into Microsafe® jug with onion and lettuce leaves. Put lid on jug with pourer open and cook for 3 minutes. Stir. Cook a further 5 minutes. Add peas, mint and sugar. Stir so the peas are well mixed with lettuce, etc. Add stock. Put lid back on with pourer open and cook for 15 minutes or until the peas and lettuce are tender. Let rest for 2 minutes. Leave the flap open while the food is hot.

Process or use a hand-held electric blender to make a puree. Add seasoning to taste.

Reheat in microwave in the Microsafe® jug with lid on and pourer open or, for individual servings, in small Microsafe® containers with red steam-release vent open.
