Easy Vegetable Soup
Preparation time 8 minutes. Cooking time 10 minutes.
We used the Microsafe® jug.
Peel and dice or grate:
1 small onion
1 small carrot
½ small sweet potato
1 small potato
corn from 1 cob.
You need 2 cups of vegetables altogether.
For the best result, cut the vegetables quite small.
Put into jug with 45 grams butter. Put lid on jug with pourer open. Microwave on high for 5 minutes. Stir.
Add 3 cups water and 1 stock cube or 3 cups stock.
Mix in 1 tablespoon tomato paste. Microwave for another 5 minutes, with pourer open. Stir.
Microwave again with pourer open until the vegetables are tender (about 5 minutes). Let rest for 2 minutes. Leave the flap open while the food is hot.
Note: To make a creamy style soup, puree with a hand-held electric blender through pourer.
Garnish: add a little chopped parsley and grated cheese then top with croutons.
