Easy Mashed Potato and Variations
Serves 2 to 3.
Preparation time 6 minutes. Cooking time about 12 minutes
We used the Microsafe® jug.
500 grams potatoes
60 grams butter or margarine
Peel and quarter potatoes. Put into the jug. Add ½ cup hot water. Put lid on jug with pourer open. Microwave on high until tender (about 12 minutes).
Remove from microwave. Drain away water. Remove lid. Add a generous amount of butter or margarine. Mash in jug using a potato masher. Serve.
Fluffy Mashed Potato
As above, but after draining away water and adding butter pour in ½ cup milk. Microwave again for 1 minute. Then mash gently using a potato masher so the potato is blended with the milk to give a fluffy mixture.
Italian Garlic Mashed Potato
As above but in the beginning add 6 peeled whole garlic cloves. Mash in the same way. It will have a gentle garlic flavour. Additions such as parsley, chopped spring onion and some cheese make it more interesting too, but these should be added at the finish to the hot potato. Other vegetables such as pumpkin, sweet potato, carrot and parsnip can also be cooked and then mashed in this manner.
