Chocolate Fudge Pudding

Serves 6.

Preparation time 12 minutes. Cooking time 7 minutes.

We used the Tellfresh® Microsafe® 1.5 litre round storer (without steaming rack) and the Microsafe® jug.

125 grams good quality dark chocolate
125 grams butter
2/3 cup sugar
3 egg yolks
1/4 cup ground almonds
1/3 cup cornflour.
1 tablespoon brandy (optional)
Break dark chocolate into small chunks and put into storer. Microwave uncovered for 1 minute. Stir gently. Microwave again until melted (about 2 minutes).

In the jug, cream 125 grams butter and 2/3 cup sugar. Add 3 egg yolks one at a time (save the whites) and mix through. Mix in: melted chocolate. 1/4 cup ground almonds. 1/3 cup cornflour. 1 tablespoon brandy (optional). Beat the 3 egg whites until stiff and fold through a little at a time.

Grease base and sides of storer. Spoon in chocolate mixture. Microwave uncovered on high for 5 minutes. Check, and if it is not firm on the edges cook a further 2 minutes (the centre should still be soft and will firm as it rests).

Remove from microwave. Put lid on storer with red vent open. Let rest for 8 to 10 minutes before turning out.

Serve with chocolate sauce or custard and cream.
