Festive chocolate Christmas cake
250g unsalted butter, softened
300g brown sugar
300g sour cream
2 tsp natural vanilla extract
275g self-raising flour
50g cocoa powder
700g vanilla frosting
chocolate decorating gel, smarties and gingerbread figures, to decorate
1. Combine the butter and brown sugar in the bowl of a stand mixer and beat with the paddle attachment on medium speed for 5 minutes. Beat in the eggs one at a time, then gently fold in the sour cream and vanilla.
2. Sift in the flour and cocoa powder, then stir until smooth. Spoon ½ the mixture into a well-greased Décor® Microsafe™ 22cm/8.6″ Cake Tray, then microwave on high power for 7 minutes. Stand for 5 minutes, then invert to turn out. Repeat with the remaining mixture. Cool completely.
3. Use a serrated knife to split the cakes, then spread each with vanilla frosting and stack up. Cover with remaining frosting and smooth with a palette knife. Pipe chocolate gel lines for cables, then use smarties to create Christmas lights. Garnish with gingerbread figures.
