Preparation time 10 minutes. Cooking time about 30 minutes.
We used the 2 litre Thermoglass™ dish, Microsafe® lid, a saucepan, mixing bowl and Decor trivet.
1 quantity of Lemon Poached Apples (or Pears) - preparation instructions, click here: http://www.decor.com.au/recipes/recipe,documentId,9014.aspx
Pudding mix
60 grams butter, cut into small pieces
¾ cup sugar
2 eggs
½ cup milk
1 teaspoon vanilla
1 cup self-raising flour
| Apple (or Pear) Pudding
Put the poached fruit in the Thermoglass™ dish and cover securely with the Microsafe® lid, steam vent open. Warm in the microwave for about 2 minutes. Rest hot Thermoglass™ dish on Decor trivet while making up the pudding mix.
Or:
Put the poached fruit into the Thermoglass™ dish and pre-cook uncovered in a moderate oven (180°C) for 5 minutes. Rest hot Thermoglass™ dish on Decor trivet while making up the pudding mix. This pre-cooking will allow the fruit to cook more evenly in the pudding than if taken directly from the refrigerator.
Pudding Mix
Melt butter in a saucepan. Put sugar into a mixing bowl, pour butter over and stir to moisten. Add eggs, milk and vanilla and mix. Sift flour over the top and stir well. Spoon over the poached fruit in the Thermoglass™ dish. Bake uncovered in the oven for about 25 to 30 minutes or until golden brown on top. There should be no liquid when the pudding batter is pierced in the centre with a skewer. Rest hot Thermoglass™ dish on Decor trivet. Serve with rich custard (see Microsafe® desserts recipes on the Decor website www.decor.com.au). Add ice cream if desired. Any leftovers can be stored in the Thermoglass™ dish in the refrigerator withthe Microsafe® lid on, steam vent closed. Keeps well in the refrigerator for up to 48 hours.
To reheat
Click open steam vent on the Microsafe® lid and microwave on high until warm. Rest hot Thermoglass™ dish on Decor trivet.
