Broccoli with Cheese Sauce

Makes about 2 cups

Can store in the refrigerator for up to 24 hours or freeze for up to two weeks.

300 grams broccoli, cut into tiny sprigs
45 grams salt reduced butter
1 1/2 tablespoons plain flour
1 1/2 cups milk
1/3 cup grated cheddar or a similar cheese
Cook the broccoli for about 3 minutes in boiling water and drain well. If you prefer to microwave broccoli, arrange flowerets on the steaming rack in a Decor Microsafe® storer. Pour 1/2 cup hot water over florets. Put lid on storer with red vent open. Microwave on high for 5 minutes. Arrange in a layer in a shallow ovenproof dish.

Make the sauce in a Decor Microsafe® jug. Put the butter into the jug and melt on high in the microwave (this will take about a minute). Mix in the flour and stir then microwave on high for 1 minute. Gradually add the milk and place lid on the jug with pourer open. Microwave for 3 minutes, stir and then microwave again for 3 minutes. If not thickened, stir and microwave for a further 2 minutes. Whisk until smooth. While warm, add the cheese and spoon over the broccoli. Bake uncovered in a moderate oven for about 20 minutes or until glazed. Remove from oven and use as much as you need for the meal, mashing with a fork to the consistency that your baby likes. Store the remainder in the refrigerator or freezer.

Note: For variety, cauliflower can also be used as an alternative to broccoli. Sometimes after freezing and then reheating the sauce may be thinner but just stir the mixture and then mash with a fork.
