Cabbage, Pineapple and Smoked Chicken Salad

Makes enough for four 600ml Bright&Healthy™ lunchkits.
Keeps well for up to 24 hours in refrigerator.


250 grams smoked chicken breast, cut into cubes or slices
2 cups finely shredded plain or Chinese cabbage
3 spring onions, finely chopped
1 cup grated carrot
3 slices pineapple, cut into small pieces
1 stalk celery, thinly sliced

Dressing:
1/2 cup orange juice
2 teaspoons honey
1 tsp grain mustard
2 tablespoons plain low fat yoghurt
Whisk the dressing until smooth. Mix the salad ingredients. Add dressing and toss. Store refrigerated in a Tellfresh® storer until required.

Note: The salad will reduce in volume when stored, so the total quantity will depend on whether it is eaten freshly made or stored.
