Caesar Salad | Makes enough for two Bright&Healthy™ 600ml lunchkit lunches.
Keeps well for up to 12 hours in refrigerator.
4 long rashers bacon, fat removed
about one dozen small cos lettuce leaves, cut into pieces
2 hard-boiled eggs cut into quarters
Dressing:
3 anchovies, roughly chopped
1 tablespoon capers, roughly chopped
dash of pepper (but not salt as anchovies and bacon supply this)
4 tablespoons light olive oil
1 tablespoon white vinegar
1 clove crushed garlic
2 tablespoons low-fat mayonnaise (see our Microsafe® recipe)
| Mix the dressing ingredients and pour into the base of the lunchkits. Take a Tellfresh® Microsafe® 2.1 litre oblong storer with steaming rack. Place paper towel on the steaming rack.
Put bacon rashers on top of the paper towel. Do not let the rashers overlap (they will not cook properly). Cover loosely with more paper towel. Microwave on high for 2 1/2 minutes, check and microwave again until crisp (timing will depend on thickness of the bacon). Let cool and break into pieces.
Place lettuce into lunchkits, add egg pieces on top, then bacon pieces. At lunchtime toss with the dressing underneath.
If using just one lunchkit, refrigerate remainder in a Tellfresh® storer.
