Chicken Waldorf Salad | Makes enough for two Bright&Healthy™ 600ml lunchkit lunches.
Keeps well for up to 24 hours in refrigerator.
1 chicken breast, cooked until just tender in a little water or chicken stock
1 large stick celery, diced
1 red eating apple, cored and diced roughly
1/2 cup chopped walnuts or pecan nuts
2 tablespoons lemon juice
Dressing:
3 tablespoons low-fat mayonnaise (see our Microsafe® recipe)
2 tablespoons low-fat sour cream
| Mix the dressing ingredients and pour into the base of the lunchkits. When ready to make the salad, dice the chicken (to keep chicken moist do not dice beforehand). Mix the remaining ingredients for the salad. Be sure to toss well so the lemon coats the apple (so it won’t discolour). Pile the salad on top of the dressing. At lunchtime, mix so the dressing coats the ingredients.
If using just one lunchkit, refrigerate remainder in a Tellfresh® storer.
