Chicken Sausage and White Beans

Makes enough for two Bright&Healthy™ 600ml lunchkit lunches.
Keeps well for up to 24 hours in refrigerator.


2 plain or flavoured chicken sausages
1 can (450 grams) white cannelloni beans, drained
1 red onion, diced
1 large tomato, peeled and diced
3 tablespoons parsley, finely chopped

Dressing:
1 teaspoon French mustard
1 teaspoon sugar
4 tablespoons light olive oil
1 tablespoon white vinegar
Cook the sausages in a frying pan until cooked through and golden. Cool slightly and cut into thin slices. While warm, mix with the beans, onion, tomato and parsley. Stir the dressing into the sausage and bean mix.

If using just one lunchkit, refrigerate remainder in a Tellfresh® storer.
