Melon and Ham Salad | Makes enough for two Bright&Healthy™ 600ml lunchkit lunches. Keeps well for up to 24 hours in refrigerator.
1/2 medium-sized cantaloupe, peeled, seeded and cut into cubes
125 grams low-fat ham, cut into strips
2 peeled ripe tomatoes, roughly chopped
10 snow peas, blanched for 1 minute
2 tablespoons pine nuts, toasted
Dressing:
4 tablespoons light olive oil
1 tablespoon white vinegar
3 teaspoons honey
1/2 teaspoon salt
half a dozen leaves of mint, chopped
| Mix the dressing ingredients and pour into the base of the lunchkits. Mix the salad ingredients and place on top of the dressing. At lunchtime, stir so the dressing coats the melon and ham salad.
If using just one lunchkit, refrigerate remainder in a Tellfresh® storer.
