Pears with Blueberries

This is a very interesting combination to serve for dessert (either warm or cold) over ice-cream. The pear slices absorb colour from the blueberries. Pears and blueberries are also a very good source of antioxidants. 

Serves 4.

Preparation time 6 minutes. Cooking time 15 minutes or until pears are tender.

Cooking time will depend on whether the pears are hard or not. If they are, it is best to cook for the given time and then microwave just a little longer.

We used the Tellfresh® Microsafe® 1.5 litre storer (without steaming rack). The 1.6 litre oblong storer could be used instead.

4 pears, peeled, cored and cut into thin slices
1 tablespoon lemon juice
2 strips lemon rind
2/3 cup water
½ cup sugar
1 cup frozen blueberries
Put pears in storer with lemon juice, rind, water and sugar. Stir. Put lid on with red vent open. Microwave on high for 12 minutes. Add blueberries. Leave lid off and microwave on high for approximately 3 minutes.

Let rest for 2 minutes before serving.

This dessert keeps well in the refrigerator for up to four days and can be reheated in the microwave. You can also serve chilled.
