 | Baked Stuffed Apples | The delicious fruit and chocolate filling will enhance the flavour of the sauce around the apples and give it a rich chocolate colour. The apples can be prepared in advance and reheated in the Microsafe® storer at dinner time. Serve with some lightly whipped cream or ice cream.
Serves 4.
Preparation time 6 minutes. Cooking time about 15 minutes.
We used theTellfresh® Microsafe® 3.5 litre round storer (without steaming rack). The size of the storer can vary according to the size of the apples used.
4 eating apples (they keep their shape better than cooking apples)
2 tablespoons lemon juice
30 grams unsalted butter
2 dried figs, finely chopped
1 teaspoon shredded orange rind, finely chopped
¼ cup chopped dark chocolate
1 tablespoon brown sugar
½ cup orange juice
¼ cup water
2 tablespoons sugar
| Peel each apple to three quarters of the way down from the top then remove core so you have a cavity to stuff with the fruit and chocolate mix. Brush cut section of the apple with lemon juice to prevent discolouration.
Put butter, figs, orange rind, chocolate and brown sugar in a bowl or storer, mash together and stuff into the centre of each apple. Place stuffed apples in the storer.
Mix orange juice, water and sugar in a bowl or storer and pour over top of apples. Put lid on storer with red vent open. Microwave on high for 12 minutes (timing may depend on the type of apples used). Check by pushing a fine skewer through side of an apple — it's ready if apple is soft and skewer inserts easily. If necessary microwave on high for a further 2 - 3 minutes.
Let stand for 5 minutes before serving.
