 | Prosciutto and Melon Salad | | Microwave prosciutto in the easiest way to get crisp pieces that can be broken up and used as a topping on salads. There is much less mess than using a frying pan on the stove. The shards of prosciutto can be scattered over green salads or on ripe melon as in the recipe.
Serves 2.
Preparation time 4 minutes. Cooking time 3 minutes.
We used the Tellfresh® Microsafe® 2.1 litre oblong storer with steaming rack.
4 slices prosciutto
paper towels
½ green melon (or cantaloupe), peeled, seeded and diced
2 tablespoons orange juice
2 teaspoons honey
1 teaspoon oil
2 teaspoons mint
| Put steaming rack in the storer and cover with paper towel. Place prosciutto on the paper towel. Put lid on storer with red vent open. Microwave on high for 3 minutes or until crisp. Remove and let cool. Break prosciutto into shards. Put melon with orange juice, honey, oil and mint into a serving bowl and mix gently. Chill. Before serving, scatter prosciutto shards on the melon mix. Serve on some lettuce, preferably a crisp one such as cos.
