 | Pasta and Tomato Salad | | Most bought tomatoes are not very tasty but by preparing them in this way tasty juices form and develop lots of flavour. This juice and the tomato pieces make the base for a sauce to create a very fresh-tasting pasta salad as an accompaniment to a meat dish.
Serves 2 or 4.
Preparation time 5 minutes. Cooking time 3 minutes.
We used the Microsafe® jug but a Tellfresh® Microsafe® 750 ml round storer (without steaming rack) could also be used.
250 grams tomatoes, peeled and diced small
1 teaspoon salt
1 teaspoon sugar
½ teaspoon pepper
3 tablespoons olive oil
1 teaspoon balsamic vinegar
1 teaspoon chilli sauce (optional)
12 basil leaves, torn into rough pieces
125 grams small pasta, cooked until just tender and drained
| Put the tomatoes into the jug or storer. Microwave without a lid for 3 minutes (the tomatoes should still be slightly firm). While hot, mix salt, sugar, pepper and olive oil into the tomatoes. Let rest for 20 minutes so juices form and then add balsamic, chilli sauce and most of the basil. Mix this through the cooked pasta until it is coated and let cool. Stir again before serving and, if you wish, scatter more sprigs of basil on top.
