Berry Trifle

One of the most important aspects of making any berry trifle is to have soft, creamy custard binding all the ingredients together. You can make this custard quickly in the Microsafe® jug without having to stand and stir constantly, as you must do when making custard in a saucepan.

Serves 4.

Preparation time 12 minutes. Cooking time 6 minutes.

Custard ingredients:
1 Tablespoon custard powder
1 egg
3 tablespoons sugar
1½ cups milk
1 teaspoon gelatine mixed with 2 tablespoons water
1 cup whipped cream

Trifle ingredients :
12 sponge fingers
1 cup rasberries, frozen or fresh
1 punnet strawberries, hulled
the custard
additional whipped cream
grated chocolate

Make the custard first:

Put custard powder, egg and sugar in jug and mix. Add milk, stirring constantly.

Put lid on jug with pourer open. Microwave on high for 6 minutes, whisking every 2 minutes through pourer. Remove from microwave and whisk again to make the texture light. Add gelatine (it will dissolve in the heat of the jug). Let cool and them mix in cream. Chill for 10 minutes before serving.

Then make the trifle:

Break half the sponge fingers into a medium-sized serving bowl. Scatter on half the rasberries and strawberries. Spoon half the custard over the sponge fingers and berries. Add the remainder of the broken sponge fingers and berries and the last of the custard. Chill for several hours. Top with cream and grated chocolate for serving.
