Vegetable Mash

Serves 4.

Preparation time 8 minutes. Cooking time about 11 minutes.

We used the Microsafe® jug.

1kg root vegetables such as potato, sweet potato, pumpkin and onion.

Peel vegetables and dice small. Put into the jug. Add 1 cup hot water. Put lid on jug with pourer open. Microwave on high for 5 minutes. Stir.

Microwave again until vegetables are soft (about 6 minutes). Remove from microwave. Close pourer and let rest for 2 minutes. Open pourer and drain away water. Remove lid.

Mash and season in the jug, adding 45 grams butter or margarine and some finely chopped parsley or chives.
Serve.
