Chicken Meatballs in Tomato Sauce

Use as a meal with Fluffy Mashed Potato (see our recipe) or serve with pasta

Serves 2 as a meal

Serves 4 with pasta

Preparation time 15 minutes. Cooking time 7 minutes.

We used the Tellfresh® Microsafe® 3.5 litre oblong storer (without steaming rack).

1/2 cup breadcrumbs made from stale bread
1/4 cup milk
500 grams finely minced chicken
1 teaspoon salt
Dash chilli sauce to taste
1 clove garlic, finely chopped
1/3 cup grated Parmesan cheese
1/4 cup finely chopped parsley
1 can (approx. 400 grams) tomatoes
Mix crumbs and milk in a bowl. Stir and then add everything except for the tomatoes. Divide the mixture into 16 pieces and form into round balls. Place in a single layer in the storer. Put lid on storer with red vent open. Microwave on high for 2 minutes.

Remove from the microwave, take off the lid and turn the chicken balls over. Replace lid, with red vent open, and microwave on high for a further 2 minutes.

Process the tomatoes. Remove storer lid and pour tomatoes over the top of the chicken balls. Replace lid with red vent open. Microwave on high for 3 minutes.
Remove from microwave and let rest for 2 minutes.
