Pea Soup (Stove top)

Frozen peas make a very good soup, which has a lively fresh taste and an appealing pale green colour.

It can be left fresh and light or a little cream can be added to make a richer soup. Trickle the cream to make a little circle or whip some cream and put a spoonful on top so it melts.

Serves 6. (makes 6 cups).

Preparation time 10 minutes. Cooking time 20 minutes.

45 grams butter
6 lettuce leaves, finely shredded
1 onion, finely chopped
500 grams frozen peas
4 mint leaves
1 teaspoon sugar
5 cups stock or water mixed with a stock cube
salt and pepper to taste
Melt butter and fry lettuce leaves and onion until wilted (about 6 minutes). Add peas, mint and sugar, cover with stock and simmer partly covered for about 15 minutes until the lettuce is very soft.

Process or use a hand-held electric blender to make a puree. Add seasoning to taste.

Reheat in microwave in the Microsafe® jug with lid on and pourer open or, for individual servings, in small Microsafe® containers with red steam-release vent open.
