Zucchini Slice

Makes a 20 cm x 30 cm slice. Cut into cubes for the Bright&Healthy™ lunchkit. Keeps fresh for up to four days. Freezes well.

1 cup self-raising flour
1 cup low-fat grated tasty cheese
375 grams (2 cups) grated zucchini
4 eggs
4 finely chopped spring onions
1/3 cup light olive oil
1 teaspoon salt
3 tablespoons finely chopped parsley

Mix everything in a bowl, stirring well. Line a shallow 20 cm x 30 cm tin with some baking paper. Spoon in the mixture and level the top. Bake in a preheated 180°C oven for 20 minutes or until a light golden colour on top and just firm to touch.

Cool in the tin and cut into cubes as needed, or cut and refrigerate or freeze in a Tellfresh® storer.
