 | Confetti Macaroni | Makes enough for three 600ml Bright&Healthy™ lunchkit lunches.
Keeps well for up to 24 hours.
1 cup (125 grams) small macaroni
1 cup mixed finely diced vegetables (such as carrot, corn, capsicum, etc.)
Dressing:
4 tablespoons light olive oil
1 tablespoons white vinegar
1 large diced ripe tomato
2 teaspoons honey
| | Heat a large pot of water with a pinch of salt, add the macaroni, stir and cook 2 minutes. Add the vegetables. Cook until the macaroni is tender, and the vegetables cooked. Drain. Mix the dressing ingredients. While the macaroni and vegetables are still warm, mix in dressing.
Let cool completely and refrigerate in a Tellfresh® storer until required.
Note: a touch of spice can be introduced with the addition of a tablespoon of Thai Sweet Chilli Sauce.
